- vegetable-based oil for deep frying, I use corn oil (2 inches or enough to submerge the chicken tenders)
- 1 large egg
- 2 tablespoon all-purpose flour
- ¼ teaspoon green smoked paprika
- ¼ teaspoon ground cumin
- ¼ teaspoon ground cayenne pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon fresh ground black pepper
- 1 teaspoon Kosher salt
Instructions
- Place a wire rack on a rimmed baking sheet.
- Add corn oil to a 12" cast iron skillet or Dutch oven on the stovetop under hot temperature.
- In a small mixing bowl, combine flour, salt, smoked paprika, black pepper, cumin, onion powder, garlic powder, cayenne pepper, and whisk to combine.
- In a 2-cup wet measure, add buttermilk, dissolve ¼ cornstarch in the buttermilk, add egg, stir to combine.
- Add the spice-flour mixture to the buttermilk-cornstarch mixture and stir to combine. Add a new mixture to a large mixing bowl.
- Pat dry the chicken tenders with paper towels if needed. Add the chicken tenders to the batter and using a spoon, stir to combine until tenders are fully coated.
- After the oil is brought to hot temperature, using tongs, add the chicken tenders coated in the batter to the hot oil. Cook 6-8 minutes or until golden brown.
- When they are done, cool on a wire rack over a rimmed baking sheet.
- Serve with your favorite dipping sauce and sprinkle with fresh herbs to garnish, if you wish.
