Easy Shepard’s Pot Roast Pie
I am gearing up for our Fall schedule, I am all about getting dinner on the table in a fast and easy way but I also want food to have a quality, homemade feel even if I take some “shortcuts”.
For this Easy Shepard’s Pot Roast Pie recipe, I used Stouffer’s Complete Skillets Yankee Pot Roast and topped it with homemade mashed potatoes.
It makes enough to feed a crowd I serve it in a large 3-quart (3.3 L) dish.
Being able to save time preparing dinner and keeping it to one-dish, frees up my time and makes it easier to clean up.

Ingredients for Easy Shepard’s Pot Roast Pie
Here are the ingredients that you will need for Easy Shepard’s Pot Roast Pie:
- 1 bag of Stouffer’s Complete Skillets Yankee Pot Roast (2 lb 8 oz./1.13 kg)
- 1-5 lbs. (2.27 kg) bag of white (or preferred variety) potatoes, peeled and cubed (about 1″ cubes)
- 4 tablespoons butter, plus more for serving
- 3/4 cup of whole milk (can substitute you preferred kind of milk), plus more if needed for desired consistency
- 2 teaspoons of salt for boiling the potatoes (to be added to the water)
- salt and pepper to taste
- Optional: parsley or your favorite herb to garnish

Julie’s recipe is very similar to how my mom always made mashed potatoes.
This Easy Shepard’s Pot Roast Pie makes more than enough to feed our little family of 3 with extra for leftovers for lunch the next day!
It would easily be enough for a family of 4.
Easy Shepard’s Pot Roast Pie would also be great for a dish to bring to a potluck since it is big enough to feed a crowd.

Easy Shepard's Pot Roast Pie
This Easy Shepard's Pot Roast Pie takes only 6 ingredients or less to make, has a STOUFFER'S® Complete Skillets Yankee Pot Roast topped with homemade mashed potatoes.
Ingredients
- 1 bag of Stouffer's Complete Skillets Yankee Pot Roast, (2 lb 8 oz./1.13 kg)
- 1-5 lbs ., (2.27 kg) bag of white (or preferred variety) potatoes, peeled and cubed (about 1" cubes)
- 4 tablespoons butter, , plus more for serving
- 3/4 cup of whole milk, (can substitute you preferred kind of milk), plus more if needed for desired consistency

- salt and pepper to taste

Instructions
- Prepare the Stouffer's Complete Skillets Yankee Pot Roast according to the direction on the package.
- While it's cooking (or a day ahead) prepare the mashed potatoes. Put peeled and cubes potatoes in cold salted water and bring to a boil. They should be done in 8-10 minutes, be sure to test a piece with a fork to see if it's tender and ready. When they are done, remove from heat and drain well. You can mash by hand but to save time you can use a stand mixer with a paddle attachment, put in butter, salt, pepper and 3/4 cup milk. Mix until combined, add a little more milk if you wish for a smoother consistency.
- When the Stouffer's Complete Skillets Yankee Pot Roast is done, put it into a large 3-quart dish and spread evenly. Spread mashed potatoes on top. This recipe makes a generous amount of mashed potatoes so you can use half the amount and reserve the rest for your next dinner. Top with more butter, salt and pepper at serving if you chose and garnish with your favorite green herb. Enjoy!
