Lemon Dijon Dressing
Hi Everyone, This Lemon Dijon Dressing is versatile because it can also be used as a marinade for veggies, meat, or fish.
For extra virgin olive oil stick to temperatures 200°F-325°F or below.
If you need to cook above 200°F-325°F, switch out the EVOO for light olive oil that will hold up in higher temps. (see this helpful guide on oil smoke points for reference).
I have used this for chicken and fish with success.
It has saved me many a time by being a weeknight marinade when I have been at a loss at what to make and then I can make more for a dressing to serve with salad in the same meal.
Now, I would say this Lemon Dijon Dressing is a simple recipe hack that can give a lot of value for little effort!

Ingredients
- 3/4 cup regular olive oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
- 1 teaspoon of fresh lemon juice or more depending on the desired acidity
- 1 teaspoon Dijon mustard
Optional
- add a little lemon zest to make it extra lemony and zesty
- more salt and pepper to taste, if desired

- small whisk
