Ingredients

  • 2 pounds (900g) of cream cheese, at room temperature
  • 1 ⅓ cups (265g) granulated sugar
  • 5 large eggs
  • 2 cups (480ml) heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • Zest from one lemon
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a 9-inch (23cm) round cake pan with parchment paper.
  2. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  3. Add the sugar and continue to beat until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the heavy cream, flour, vanilla extract, lemon zest, and a pinch of salt. Mix until smooth.
  6. Pour the cheesecake batter into the prepared pan.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is deeply caramelized and the center is slightly jiggly.
  8. Allow the cheesecake to cool to room temperature before refrigerating for at least 4 hours, or overnight, for best results.
