Ingredients

  • 4 cups bread flour
  • ½ cup warm water
  • 1 tablespoon active dry yeast
  • 1 cup granulated sugar
  • 4 large eggs
  • ¾ cup unsalted butter softened
  • ½ cup mixed dried fruits (such as raisins, candied orange peel, citron)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. In a small bowl, combine the warm water and yeast. Let it sit for 5-10 minutes until it becomes frothy.
  2. In a large mixing bowl, beat the eggs with sugar until creamy. Add in the yeast mixture, butter, vanilla extract, lemon zest, and orange zest. Mix well.
  3. Slowly add the flour and salt to the wet ingredients, mixing until a dough forms.
  4. Knead the dough on a floured surface for about 10-15 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours or until it doubles in size.
  6. Punch down the risen dough and knead in the dried fruits gently.
  7. Shape the dough into a round ball and place it into a Panettone mold or a tall, greased pan. Allow it to rise for an additional 1-2 hours until it reaches the top of the mold.
  8. Preheat your oven to 350°F (175°C).
  9. Make a cross-shaped incision on top of the risen dough and bake for 45-55 minutes or until golden brown. If the top starts browning too quickly, cover it loosely with aluminum foil.
  10. Remove from the oven and let it cool completely before slicing.
