½ cup packed brown sugar (you can use dark or light)
2 large eggs, lightly beaten
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon fine kosher salt
1 (12 ounces) package of semi-sweet chocolate chips
2 cups mini marshmallows (fresh is best!)
1 cup chopped walnuts, almonds, and pecans - equally mixed
Note: If you are not adding nuts, add 3 more tablespoons of all-purpose flour
Instructions
Preparation: Arrange your oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line a 9x13-inch baking pan with parchment paper. Tip: Scrunch the parchment underwater to make it wrinkled - it will better conform to the baking pan.
Mix the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
Mix the wet ingredients: On the stovetop, in a medium-large saucepan, melt the unsalted butter over medium heat. When the butter is melted, add the butterscotch chips and the brown sugar. Stir the mixture until it's just melted. Remove the saucepan from the heat and allow it to cool for 10 minutes. Add the lightly beaten eggs and vanilla into the saucepan and mix well.
Gradually stir in the flour mixture until it's completely incorporated. Add the mixed nuts, mini-marshmallows, and stir to combine. Spread the batter into the prepared pan. Tip: You can put a flavorless oil, like Canola oil, on your hands to spread it into the pan.
Bake: Bake for 20 minutes. When it's done, you can insert a toothpick or butter knife to test for doneness, and it should come out pretty much clean. You don't want to overbake, as the bars cool, they will continue to bake and set up. When they are cool to room temperature, put the baking pan into the fridge for 1 hour before slicing into bars.
