Ingredients

  • 1 package Smithfield® Marinated Homestyle Pork Roast
  • 2-4 wedges Iceberg lettuce
  • 2-4 small sweet potatoes
  • salt and pepper to taste, optional
  • 1 pinch Italian parsley for garnishing, optional
  • 2-4 tbsp unsalted butter for serving, optional
  • your favorite dressing for the wedge salad, optional
  • 4 cherry or grape tomatoes, sliced for serving with the wedge salad, optional

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Slice the pork in half-inch to 3/4 inch sections. Place slices in a 9 x 9-inch baking pan if making half or a 9 x 13-inch pan if making all the pork. Bake in the oven for 30 minutes.   3. Bake small sweet potatoes in the same oven, on another rack over a foil-covered baking sheet. If you have larger sweet potatoes, you can start them earlier, make them ahead, or just cook them a little longer. You can also cut them into smaller pieces to speed up the baking time.
  4. While the pork and sweet potatoes are baking, prepare the iceberg lettuce wedge salad by slicing a head of lettuce into desired wedge sizes. Serve the wedge salad with your favorite dressing.
  5. When the pork slices and sweet potatoes are done, check for doneness (cook longer if necessary and use a meat thermometer for accuracy & juices should run clear) and plate and serve with the wedge salad and dressing.
