Instant Pot Sweet Potato Chicken Chili

This Instant Pot Sweet Potato Chicken Chili is the perfect bowl of Winter comfort food. This recipe can be made quick and easy in your instant pot. Make this warm and savory chili in advanced to have for the week. It is sweet from the sweet potatoes and comforting from the chicken. They are paired together perfectly to satisfy! Add any additional topping of your choice to top it off.

Ingredients

  • 1/2 cup diced onion
  • 1.5 cups kidney beans
  • 1.5 cup black beans
  • 2 cups diced sweet potato
  • 1 cup frozen corn
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1 (14.5 oz) can diced tomatoes
  • 1 can tomato sauce
  • 2 Tbsp chili powder
  • 1 tsp cayenne pepper, optional
  • 1lb ground chicken
  • 1 cup vegetable broth
  • optional toppings: plain Greek yogurt, cheese, avocado, scallions

Instructions

    1. Turn instant pot on and click the saute function key, then add ground chicken until almost fully cooked. Then add minced garlic to release its flavors for about 3 minutes.

    2.Once chicken is done cooking, add the rest of ingredients to the instant pot (except the optional toppings)

    3. Close lid and use the chili button on the instant pot and set to cook for 30 minutes.

    4. Once pressure starts to release allow the steam to leave the pot, then open the instant pot and let cool to serve!

    5. Add any additional toppings of your choice.
