Dragon Fruit Whipped Coffee

This Dragon Fruit Whipped Coffee recipe has icy, (coconut) milk, infused with dragon fruit powder, and is topped with lofty, whipped coffee (also, called, “Dalgona Coffee”) and then dusted with more, all, natural, hot pink dragon fruit powder to finish! (vegan option/vegetarian, makes 1 serving)

Ingredients

  • 1 cup cold milk or vegan milk
  • 1/2-1 teaspoon dragon fruit powder
  • ice cubes
  • 2 tablespoons instant coffee
  • 2 tablespoons confectioner's sugar (or regular granulated white sugar)
  • 2 tablespoons cold water

Instructions

  1. Make the whipped coffee topping: Combine the instant coffee, water, and confectioner's sugar together, until you create a frothy whipped topping. I recommend a milk frother, but you can use a whisk or even a handheld electric mixer/stand mixer to mix the ingredients to stiff peaks.
  2. Make the Dragon Fruit Milk base: In a tall wet measure container, add the milk and then the dragon fruit powder, using a frothing wand, froth the mixture until combined.
  3. Build the drink: Pour the cold dragon fruit milk into a chilled glass, add ice cubes, spoon the whipped coffee on top, dust with more dragon fruit powder to finish, add a straw and enjoy!
