Blue Butterfly Pea Flower Rice Krispie Treats

Blue Butterfly Pea Flower Rice Krispie Treats have butter, mini marshmallows, all-natural blue butterfly pea flower powder, and crisp, puffed rice cereal. They are classic Rice Krispie treats with the same taste, in a pretty, all-natural blue color! (makes 9-12 pieces)

Instructions

    1. Prep the pan: Place wax or parchment paper in the 8x8x2 or 9x9x2 pan and clip the edges with binder clips or clothespins so it doesn’t move.Chocolate-Dipped Rice Krispies Treats

Make the Blue Butterfly Pea Flower Rice Krispie Treats: In a large pot over the stove, on low heat, heat the butter until melted, add the mini marshmallows (add 1-2 cups extra mini marshmallows, for chewier bars), and stir slowly until melted, add the blue butterfly pea flower powder, and using a whisk or baking spatula, make sure it’s evenly melted and mixed and then add the rice cereal and mix with a wooden spoon until combined. Spread them in the prepped pan making sure not to press down too hard so that they don’t compact. Allow them to cool before slicing them into squares. Cooling can take a 1/2 hour or up to 2 hours at room temperature or you can put them in the refrigerator for 10-15 minutes, to speed up the process. When they are cool, cut them into 12 squares (or you can do a different size if you prefer). Enjoy!

Notes

  • Storage: You should eat them right away but you can store them in an air-tight container, at room temperature for up to 2 days.
