Dragon Fruit Angel Food Cake

This Dragon Fruit Angel Food Cake recipe is a classic angle food recipe with a twist, it has dragon fruit powder infused into the batter, sprinkled on top, and served with fresh dragon fruit slices and dragon fruit simple syrup!

  1. Preparation: Preheat the oven to 325°F for a non-stick pan (350°F for an aluminum pan). Move the oven rack to the lowest position, for baking. You do not have to grease the pan.
  2. Make the Batter: In a large glass or metal mixing bowl, add the angel food cake mix, add the water and using a handheld electric mixer, mix on low for 30 seconds and then beat on medium for 1 minute. Using a 1/4 (3 tablespoon) cookie scoop, add enough batter to cover the bottom of the pan. You can gently shake the cake pan to even out the cake layer. Sift 1 teaspoon dragon fruit powder onto the batter, and mix the powder into the remaining batter completely. Using the large cookie scoop, scoop enough pink cake batter to cover the white batter. Sift 1 more teaspoon of the dragon fruit powder and completely mix into the remaining batter. Scoop the remaining batter into the cake pan. You can use a baking spatula to scrape all the remaining batter into the cake pan.
  3. Bake the cake: Bake for 37-47 minutes. When the cake is done, the top should be golden brown and the top of the cake should be dry and not sticky. To cool the cake, turn it upside-down on a bottle until it's cooled completely. Alternately, you can turn the pan on its side. After it's cool, you can use an offset spatula, to help separate the cake from the side. Optionally, you can sprinkle more dragon fruit powder on top of the cake, and serve with fresh, dragon fruit slices and dragon fruit simple syrup. Enjoy!

Notes

  • Dragon Fruit Simple Syrup: Simmer over low-medium heat on the stovetop & whisk together: 1 cup water + 1 cup granulated white sugar + 1 teaspoon dragon fruit powder.
  • Alternate cake pans:
  • 2 (9-inch) loaf pans bake for 35-45 minutes
  • 3 (8-1/2-inch) loaf pans 28-38 minutes
