– 1 box (14.5 ounce/411 grams) cooked Protein Penne Pasta (we use Barilla brand), made ahead and chilled
– 1 can (15.5 ounce/439 grams) chickpeas, low sodium, drained and rinsed
– 1 cup shredded carrot (use peeled carrots)
