– Yukon Gold or - Russet Potatoes – Water – Salt – Unsalted Butter

Pressure Cook the Potatoes: Place the prepared potatoes in the Instant Pot, pour the water in, add 1 tsp of salt, cover, set the valve to "sealing", and manually set it to cook for 8 minutes.

Mash the Potatoes: When the potatoes are done cooking, allow them to depressurize naturally or use the "quick release" valve. Uncover and drain the potatoes.

Return the potatoes to the pot, and add the butter, half-and-half, add salt (amount to taste), and fresh, ground pepper (amount to taste).

Whip the potatoes with a handheld electric mixer. You can keep the potatoes warm in the Instant Pot for serving.
