Soak the potatoes: Soak the peeled potatoes in salted water with apple cider vinegar overnight.
Make sure the water covers the top of the potatoes, cover in an air-tight container, and chill in the fridge for at least 8 hours and up to 48 hours.
Alternately, you can process the potatoes into slices and soak the slices the same way for the same amount of time.
