Preheat oven to 300 degrees F.

Whisk the egg yolks and 3 tablespoons of sugar in a heat-proof mixing bowl and set aside.

In a small-medium saucepan, bring heavy whipping cream and vanilla extract to a boil and reduce to a simmer for 8 minutes, then remove from heat.

Slowly pour the whipping cream-vanilla mixture into the egg mixture while whipping the eggs with a whisk very fast, so that the eggs do not scramble.
