Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius). Line a rimmed baking sheet with parchment paper, drizzle the parchment paper with olive oil and set aside.


In a small bowl, add 1/4 cup of regular olive oil, 2 teaspoons of minced garlic, 1 teaspoon of kosher salt, and 1/4 teaspoon of fresh ground black pepper and whisk together until mixed.


Place the prepared cabbage slices on the prepared, rimmed baking sheet. Using a pastry brush, brush the cabbage slices evenly with the olive oil seasoning mixture on both sides.
