Make the brownies (either my recipe or from a box) and allow them to cool completely before making the ice cream sandwiches so that the ice cream does not melt.
When the brownies are cool, you can slice 12 squares and cut the squares lengthwise. Optionally, you can make 6 large ice cream sandwiches instead of 12 by not cutting the brownies lengthwise.
As you work on each ice cream sandwich, it's a good idea to have a wax or parchment-lined baking sheet to be able to place the finished sandwiches back in the freezer so that they do not melt.
