Cottage Cheese Papaya
Hi Everyone! I want to share with you an easy breakfast that is delicious and filling.
I love papaya because is it so juicy when it’s perfectly ripe.
I have been seeing some lovely ripe papayas in the grocery store this Spring/Early Summer like the one below with it’s pretty green and yellow skin.
This recipe reminds me of another recent fruit recipe I have shared: Fresh Figs with Agave Syrup.
The inspiration for this Cottage Cheese Papaya comes from when I was an intern at an architecture firm in Boston, my first real job beyond babysitting as a teenager.
Every Monday morning, everyone took turns bringing in breakfast for the morning meeting where we went over all the active projects.
This was one of the breakfasts that someone brought in and I think it was the first time I ever tried papaya and I was blown away by how delicious it was.
Papaya is also known for being great for the digestive system.
Make sure you scrape out all those seeds, those are not edible.
Papaya is such an interesting fruit in terms of it’s flavor, to me, it almost has this coffee flavor to it which I find so unusual for a fruit.
Web Story
I love the color of the papaya too, it’s so beautiful and vibrant.
The cottage cheese has calcium and protein.
I usually get the full fat variety but you can chose fat free, 1% or 2%, if you chose.
I hope you enjoy this Cottage Cheese Papaya!
