Dill Pickle Grilled Chicken is a favorite, summer grilling recipe. This recipe has only 2 required ingredients: Chicken and leftover dill pickle juice – so don’t throw out that pickle juice!
Ingredients
– 2 pounds boneless skinless chicken thighs – 32-ounce jar of pickle juice (about 2.5 cups) – Optional: dill pickle slices, for serving
Prep: In a large container (with a lid), add leftover dill pickle juice from a 32-ounce pickle jar (2.5 cups). Add the boneless, skinless chicken thighs.
Stir to coat the chicken with pickle juice. Refrigerate for 2-8 hours, or overnight, to marinate.
Grill: When the chicken is done marinating, grill the chicken on high heat (400°F) for 8-10 minutes (covered) on the first side.
Then using tongs, flip the chicken over and grill for another 8-9 minutes (covered) more or until the internal temperature reaches 165°F. Serve with dill pickles (optional). Enjoy!
