In a bowl, whisk together 12 large eggs, 1/4 cup of milk or half-and-half, and salt and fresh, ground pepper, amount to taste.

Heat 1 tablespoon of regular olive oil in an oven-safe skillet over medium heat. Add 1/2 diced onion and cook until softened about 5 minutes.
