– 2 cloves fresh garlic, chopped– 1 pound carrots, peeled, chopped into 1/2 inch pieces, about 6-7 large carrots– 1 cup yellow onion, peeled, chopped– 1 cup celery, washed, chopped
In a large soup pot or Dutch oven, over medium-high heat, add the 3 tablespoons olive oil, add the chopped garlic, chopped carrots, celery, and yellow onion.
After simmering for 20 minutes, remove from heat and blend the soup with an immersion blender or in batches with a regular blender Blend until you get a smooth texture.
