Pan-Fried Chickpeas are an easy side to throw together or can be used sprinkled over a salad, in wrap or taco.
– 1 (15 ounces) can of chickpeas, rinsed (no liquid) – 1/2 onion, chopped – 1-2 tablespoons olive oil, (can substitute coconut oil or butter)
Heat a medium skillet with olive oil (starting with 1 tablespoon) over medium-high heat.
Add chopped onions and 1 can of chickpeas. Season with the desired amount of salt.
Allow it to cook for 8-10 minutes, stirring occasionally and allowing them to brown.
