Watermelon Lime Mint Salad

This Watermelon Lime Mint Salad recipe is light, hydrating, refreshing, and the perfect fruit salad for the Spring and Summer months.

– 6 cups cubed ripe watermelon, seeds removed

Ingredients

– 1 lime fresh squeezed, seeds removed

– 1 1/2 teaspoons dried mint, you can substitute 4.5 teaspoons fresh mint

– 1/8 teaspoons kosher salt, optional

In a medium mixing bowl, combine cubed ripe watermelon, fresh-squeezed juice of 1 lime, dried mint, and optional sugar, optional kosher salt, and optional feta cheese crumbles.

Serve with optional feta cheese crumbles and lime wedges. Enjoy!
