Melt the chocolate: In a small bowl, add the chocolate and coconut oil. Microwave the bowl for 30 seconds on high, stir, microwave for 30 more seconds, stir, and microwave for 30 more seconds.
Lay 2 rice cakes on the parchment paper, and spread peanut butter or your favorite nut butter on the top of the rice cakes. Dip each rice cake into the melted chocolate.
