Sheet Pan Lemon Tarragon Salmon Dinner features roasted green beans and cauliflower for a flavorful, low-prep meal ready in just 30 minutes!
– Salmon – Oil – Lemon – Tarragon
Line a rimmed baking sheet with aluminum foil and set it aside.
In a medium-large mixing bowl, mix the olive oil, lemon slices, balsamic vinegar, chopped tarragon, chopped parsley, salt, pepper, and optional garlic. Marinade for at least a half-hour.
In a large mixing bowl (or 2 separate ones if you want to keep the vegetables separate), mix the green beans, cauliflower florets, salt, and olive oil until it's fully coated, set aside.
When the salmon is done marinating, preheat the oven to 350 degrees F. Place the marinated salmon in the middle of the prepared sheet pan, pour the remaining marinade over it.
