-rimmed baking sheet -silicone baking mat - measuring spoons and cups - large mixing bowl

– 2-2 1/4 cups (11.6 ounces) beets, washed, peeled, cut into 1/2 inch cubes – 1 tbsp regular olive oil

Ingredients

– 1/2 tsp Kosher salt, or amount to taste – 1/4 tsp black pepper, or amount to taste

Preheat oven to 400 degrees F.

Line a baking sheet with a silicone baking mat or, parchment paper, or aluminum foil.

Make sure beets are washed and skinned with stems and root tails removed.
