Oven Roasted Beets
Hi Everyone, I have a delicious Fall-inspired, root vegetable recipe for you: Oven Roasted Beets. This is one of my favorite way to have beets: roast-y and toasty, baked in the oven.
I love the gorgeous color that beets have, they are always a show-stopper on a dinner plate.
This Oven Roasted Beets recipe serves 1-2 people, so it’s the perfect amount for lunch or dinner.
The amount in this recipe can be doubled or tripled for larger crowds.
Beet Season in New Jersey
Beet season in our area of New Jersey is from July 1st (June 1st) to October 31st (late November 30th).
Ingredients
- 2-2 1/4 cups (11.6 ounces) beets, washed, peeled, cut into 1/2 inch cubes
- 1 tbsp regular olive oil
- 1/2 tsp Kosher salt, or amount to taste
- 1/4 tsp black pepper, or amount to taste

Oven Roasted Beets

Ingredients
- 2-2 1/4 cups (11.6 ounces) beets, washed, peeled, cut into 1/2 inch cubes
- 1 tbsp regular olive oil
- 1/2 tsp Kosher salt, or amount to taste
- 1/4 tsp black pepper, or amount to taste
Instructions
- Preheat oven to 400 degrees F.
- Line a baking sheet with a silicone baking mat or, parchment paper, or aluminum foil.
- Make sure beets are washed and skinned with stems and root tails removed. Cut into 1/2 inch pieces and toss in a bowl with 1 tablespoon regular, olive oil, 1/2 tsp. Kosher salt and 1/4 tsp. fresh ground pepper until coated. Bake at 400 degrees F for 30 minutes or until tender and roasted.
- Enjoy over a salad or as a side dish with your meal.
