I have many of them on the blog and I am happy to bring you another delicious Salmon recipe that you can have any night of the week be it a regular dinner or a special dinner for two.
This recipe can be multiplied to make more servings easily if you are serving more than two people.
I love that this Salmon Foil Packets recipe cooks up in only 25 minutes – a complete dinner made so fast!

This Salmon Foil Packets recipe is completely customizable, you can swap out the vegetables, with other favorite vegetables, if you want. Just make sure that everything is bite-size.
- 2 salmon filets (1 pound)
- 2 tablespoons Mazola Corn Oil
- 1/2 teaspoon Kosher salt, divided between the 2 foil packets, amount to taste
- 1/4 teaspoon fresh ground black pepper, amount to taste
- 1 teaspoon minced garlic (1 clove garlic, minced)
- 5-6 grape tomatoes, cut in half
- 3-4 ounces French cut green beans, washed, ends cut
- 6 red baby potatoes, cut in half to bite size

Salmon Foil Packets
This healthy Salmon Foil Packets recipe has moist, delicious salmon filets, French-cut green beans, mixed grape tomatoes, sliced onions, garlic, Italian parsley, and whole red baby potatoes. All the ingredients are contained in the foil packets and baked in the oven for 25 minutes. This makes an easy, satisfying meal. Serves 2.
Ingredients
- 2 salmon filets (about 1 pound)
- 1/2 teaspoon Kosher salt, divided between the 2 foil packets, amount to taste
- 1/4 teaspoon fresh ground black pepper, amount to taste
- 1 teaspoon minced garlic (1 clove garlic, minced)
- 5-6 grape tomatoes, cut in half
- 3-4 ounces French cut green beans, washed, ends cut
- 6 red baby potatoes, cut in half to bite size
Instructions
- Preheat your oven to 400 degrees F.
- on 2 large pieces of aluminum foil (about the size of a baking sheet) add the salmon filets, potatoes, garlic, oil, French-cut green beans, and tomatoes. Season with salt and pepper. Fold the foil over and starting at one end, fold up the foil tightly around itself finishing at the other end.
- Place the 2 foil packets on a rimmed baking sheet and place them in your preheated oven and bake for 25 minutes.
- When they are done the salmon should have an internal temperature of 145 degrees F and the foil packets (if wrapped tightly enough) should puff up. Be careful of the steam when opening the foil packets. Transfer to plates and serve. Enjoy!
