These delightful cherry tomatoes are bathed in a zesty brine infused with garlic, peppercorns, and red pepper flakes (or to make it easier, sub w/ pickling spices!).

In a medium saucepan, combine vinegar, water, garlic, pickling salt, and sugar. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt dissolve.

Meanwhile, pack the cherry tomatoes into clean, sterilized jars, leaving a bit of space at the top.

Add black peppercorns, red pepper flakes, bay leaves, and fresh herbs (if using) to each jar.

Carefully pour the hot brine over the tomatoes, leaving about 1/2 inch of headspace. Make sure the tomatoes are fully submerged.
