Instant Pot Congee 

This easy-to-make rice soup has a chicken (or vegetable) broth base and is served with fresh toppings, like chopped ginger & scallions, shredded Iceberg lettuce, fine salt, and white pepper.

COOK TIME: 20 MINS

 yield: 8 SERVINGS total time: 30 MINUTES

– 1 cup long-grain white rice (or Jasmine rice), washed

Ingredients

– 8 cups water, adjust as needed for desired consistency

Add the rinsed rice to the Instant Pot metal pot, and add the bouillon and the water.

Cover the Instant Pot with the lid, and make sure it is set to "sealing." Press the "porridge" setting.

Ladle soup into a serving bowl, add the shredded lettuce, chopped ginger, and scallion, and season with fine salt and white pepper.
