Curry Chicken Power Greens Salad
We love having salad for dinner in our house.
We often eat chicken with our dinner salads and with us eating it so often, I am always thinking about how to make chicken in new and exciting ways.
I love warm spices like curry, cumin, paprika, and pair that with savory, garlic-infused, coconut milk sauce and you have a really satisfying & flavorful dinner!
Ingredients Needed for Curry Chicken Power Greens Salad
- 2-3 tablespoons of coconut oil (or butter, if preferred)
- 1-2 cloves garlic, freshly minced (I use a garlic crusher)
- 4-5 Tyson® Individually Frozen Thin Sliced Boneless Skinless Chicken Breasts
- 1 teaspoon or more kosher salt, generally I add a pinch (1/4 teaspoon) kosher salt per side of Thin Sliced Boneless Skinless Chicken Breasts
- 1 tablespoon curry powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon white pepper (can substitute black pepper)
- 2 medium yellow onions, halved and sliced (1/2 inch, half-round slices)
- 1 can of light coconut milk
- 1 can chickpeas
- 2 tablespoons or more olive oil for salad
- 1 (5 ounces) package of baby kale
- 1 (5 ounces) package of baby mixed greens (Swiss chard, spinach & lettuce varieties)
- Salt and pepper to taste for serving
- Optional: garnish with your preference of herbs, suggested: parsley or cilantro (*I garnished with cilantro flowers from my garden)
Step-By-Step Tutorial for Curry Chicken Power Greens Salad
- Gather your ingredients
- Chop 2 onions into 1/2 round slices, set aside
- Freshly mince 1-2 cloves of garlic with a garlic press, set aside
- Melt 2 tablespoons of coconut oil (or butter, if preferred or mix) in a large pan/skillet, deep enough to hold 2-1/2 inches of liquid *I use a 12 3/4″ in. x 2-1/2″ in. pan on medium-high heat
- Place seasonings (curry, cumin, white pepper) and minced garlic into the oil, stir until combined for a few minutes
- Place desired amount of Tyson® Individually Frozen Thin Sliced Boneless Skinless Chicken Breasts (I recommend 4-5 for this amount of seasoning) in the oil mixture and turn chicken breast over, coating them evenly
- Add a pinch of salt, sprinkled to each side of chicken breast, cover with a lid or a spatter cover, cook each side for 4 minutes, adjust heat if necessary
- Pour 1 can of chickpeas with canning liquid into a pan and evenly distribute with the chicken breasts
- Pour 1 can of light coconut milk into the pan and stir until combined evenly,
- Cover skillet/pan and allow to cook for 25-30 minutes, checking & stirring occasionally (Please Note: The internal temperature on instant-read thermometer should read 175 degrees F (appliances vary, cooking times are approximate, adjust accordingly to ensure internal temperature reaches 170 degrees F).
- For serving: Option 1.) 5-10 minutes before serving, toss salad greens with 2 tablespoons of olive oil OR Option 2.) to keep it all in 1 skillet, you can put the salad greens right into the skillet and mix them in. You can serve the chicken breasts whole or sliced. Garish with your favorite herbs and enjoy!
