Instant Pot Congee is classic congee made easily right in one of our favorite kitchen appliances, the Instant Pot! This easy-to-make rice soup has a chicken (or vegetable) broth base and served with fresh toppings, like chopped ginger & scallions, shredded Iceberg lettuce, fine salt and white pepper.

Hi Everyone, this Instant Pot Congee soup recipe is the ultimate comfort food.
It’s an amazing rice soup that can be customized any which way that you want.
Instant Pot Congee Vs. Stovetop Congee
We also have another Congee recipe on the blog where we go into more detail about the soup, it’s history and why we love it so much. That version is perfect for using up chicken or turkey leftovers.
This Instant Pot version has less variables to consider and it the perfect congee to make when you might not have leftover chickent or turkey to use. It would be very easy to make for any night of the week.

How to Make Instant Pot Congee

I have included some step-by-step photos of how to make this Instant Pot Congee recipe to illustrate how easy it is to make.

Ingredients
Here are the ingredients for this recipe:
Soup Base
- 1 cup long-grain white rice (or Jasmine rice), washed
- 8 cups water, adjust as needed for desired consistency
- 8 teaspoons liquid boullion (or 8 cubes) – we like the “Better than Boullion” brand
Toppings (For Serving)
- iodized salt or any fine salt – best for soups, amount to taste for serving
- finely ground white pepper, amount to taste for serving
- 1/2 head shredded iceberg lettuce, amount to taste per serving
- finely chopped fresh ginger root, skin removed, amount to taste, for serving
- 1 bunch chopped scallions (green onion), washed and finely chopped

Instant Pot Congee
Instant Pot Congee is classic congee made easily right in one of our favorite kitchen appliances, the Instant Pot! Instructions
- Make the Soup Base: Add the rinsed rice to the Instant Pot metal pot, and add the bouillon and the water. Cover the Instant Pot with the lid, and make sure it is set to "sealing." Press the "porridge" setting. You can prep the fresh toppings while the soup cooks.
- Add the Toppings: Ladle soup into a serving bowl, add the shredded lettuce, chopped ginger, and scallion, and season with fine salt and white pepper. Enjoy!
Notes
- Instant Pot Depressurization: It takes up to 30 minutes for the Instant Pot to naturally depressurize, it is recommended for this recipe and other soup recipes and recipes where there's a lot of liquid in the Instant Pot.
