These No Bake Chocolate Chip Peanut Butter Coconut Oatmeal Cookies are a snap to make and are perfect for a mid-day or after school snack. They are made with Karo® Corn Syrup which makes them nice and chewy.
– 1 cup Karo® Corn Syrup – 1 cup granulated white sugar – 1 cup smooth peanut butter (you can use either smooth or chunky)
In a large saucepan, mix Karo® Corn Syrup and sugar, stir to combine and heat to a full boil.
Add peanut butter and the chocolate chip morsels and stir to combine.
Add in the coconut and chopped nuts and quick oats. The mixture will get stiff as it cools.
