Hi Everyone, I am always looking for a good recipe that produces a great snack with minimal effort.
This recipe can be made right on the stovetop and contains simple, pantry ingredients that you probably already have on hand.
For my vegan friends, to make this recipe completely vegan, you can use a non-dairy brand of chocolate chip morsels, which is a simple swap.
This recipe keeps well in an air-tight cookie jar on the counter for days – staying chewy all along! Just that last fact alone, that it stays perfectly chewy, makes it perfect as a make-ahead recipe and for gift-giving for the holidays or anytime! They will definitely be on my list for Christmas/winter edible gifts.
About Karo® Corn Syrup
I usually use Karo® Corn Syrup to make pecan pie during the holiday baking season, but you can use it for so much more! It can improve traditional cookie recipes and makes cookies chewy with a nice “bite.”
It is the perfect ingredient that makes cookies chewier on the outside and still soft in the middle.
Ingredients for No Bake Chocolate Chip Peanut Butter Coconut Oatmeal Cookies
- 1 cup Karo® Corn Syrup
- 1 cup granulated white sugar
- 1 cup smooth peanut butter (you can use either smooth or chunky)
- 1 cup semi-sweet chocolate chip morsels (I use mini) *to make this recipe vegan, you can use a non-dairy brand of chocolate chip morsels
- 1 cup shredded, unsweetened coconut flakes
- 1 cup nuts (you can use pecans, almonds or walnuts, or a mix of some/all)
- 3 cups quick oats oatmeal

Ingredients
- 1 cup Karo® Corn Syrup (light)
- 1 cup granulated white sugar
- 1 cup smooth peanut butter (you can use either smooth or chunky)
- 1 cup semi-sweet chocolate chip morsels (I use mini) *to make this recipe vegan, you can use a non-dairy brand of chocolate chip morsels
- 1 cup shredded, unsweetened coconut flakes
- 1 cup nuts (you can use pecans, almonds or walnuts or a mix of some/all)
- 3 cups quick oats oatmeal
Instructions
- In a large saucepan, mix Karo® Corn Syrup and sugar, stir to combine, and heat to a full boil.
- Add peanut butter and the chocolate chip morsels and stir to combine. Add in the coconut and chopped nuts and quick oats. The mixture will get stiff as it cools.
- Using a medium cookie scoop, scoop onto a silicone baking mat or parchment paper, or wax paper.
- Allow cooling for 30 minutes.
