To Make the Royal Icing: In the bowl of your stand mixer, add the egg whites and vanilla extract, set the mixer to low-medium speed.
Gradually add the powdered sugar until it's fully incorporated and glossy. Stop the mixer and scrape down the sides, if needed. The icing should be glossy and have stiff peaks when done.
Adding the food coloring: Divide the royal icing equally for how many different colors you want.
