Turmeric Carrot Fritters

Turmeric Carrot Fritters (V+GF) is a healthier, gluten-free addition to any brunch, lunch, or dinner. Packed with vitamin-rich carrots, anti-inflammatory turmeric, ground flaxseed, and Italian parsley, these complementary flavors are both healthy and delicious!

– 3 cups carrot, , shredded, (squeezed of any juice)

Ingredients

– 1/2 cup onion, , finely chopped

– 1/2 cup fresh Italian parsley, , chopped

– 2 flax eggs, (or substitute 2 chicken eggs, if not vegan)

Prepare flax "eggs" making them thicker using 2.5 tablespoons per tablespoon of ground flax, cover, and refrigerate until ready to use.

Process carrots in a food processor using the grating attachment; there's no need to skin the carrots if the skins are in good shape.

If there's a lot of moisture in the carrots you can try squeezing in a cheesecloth.
