Hi Everyone, it’s nice to have a dessert recipe that can be made easy enough around dinner time that doesn’t require a huge volume of ingredients.
This is a cookie recipe that I can make if I have a little extra time while my 3 kids are occupied. They make awesome snacks (Kodiak Cakes is a protein-packed mix).
By the way, this is not sponsored at all, I just love their product and tried their cookie recipe on the back of the box and have been making this cookie recipe in many variations on repeat a lot lately.

My husband, kids and myself LOVE these cookies. I have also made them with raisins. In these photos, I made them with mint chocolate chunks which were great.
I used a small cookie scoop which makes a cookie that is a nice size for kids and snacks.
I love that this cookie recipe has oatmeal in it. I feel like it’s more nutritious that way. I’ll even enjoy them with my morning coffee.
Hey, there is pancake mix in there after all! That counts as breakfast, right?

I made a few adjustments to the ingredients and added some more detail in my own written directions in the recipe card.
I can fit the cookie dough balls onto 3 standard rimmed half sheets. I bake them one at a time, on the center rack, to ensure an even result.

You can use a stand mixer but we mix this by hand. I’ll even have my 6 and 2 1/2-year-old help me mix – I would call this recipe, “family-friendly.”

Kodiak Cakes Chocolate Chip Cookies
Kodiak Cakes Chocolate Chip Cookies are easy to prepare with one of our favorite flapjack & waffle mix: Kodiak Cakes. All you need is butter, brown sugar, 1 egg, vanilla, oatmeal and chocolate chips in addition to the Kodiak Cakes mix.
Ingredients
- 3/4 cup unsalted butter, softened to room temperature
- 1 cup dark brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 1/2 cups Kodiak Cakes Mix (we use "Buttermilk" variety)
- 1 cup whole oats
- 3/4 cup semi sweet chocolate chips (we have used the same amount chocolate chunks, raisins or mint chocolate chunks)
Instructions
- Preheat your oven to 350°F. Line a rimmed baking sheet(s) with a silicone baking mat(s) or parchment paper, set aside. In a large mixing bowl add unsalted butter and dark brown sugar, cream together. Add the large egg and pure vanilla extract and combine. Add the Kodiak Cakes mix and oatmeal. Add the semi-sweet chocolate chips, mix evenly.
- Using a small cookie scoop, scoop the dough into balls and space out on the prepared rimmed baking sheet.
- Bake for 9-11 minutes. I usually do the full time 11 minutes in our electric convection oven.
Notes
- Storage: Store in an air tight container on the counter and consume within 3 days.
- I used my recipe for Homemade Vanilla Extract and Dark Brown Sugar for this recipe.
- Yield: 48 cookies using a small cookie scoop (2 teaspoons dough each)

Great question! Thank you for asking; I have not tried that substitution but it should – I have used coconut sugar in baking and I would expect it to work (but I can’t guarantee because I have not tried it in this particular recipe). I would just keep the same amount. Let us know how it works out if you try it!

Thanks for the prompt reply! I tried these with coconut sugar and they came out amazing! My fear was the cookie being too dense but they worked well. Also try dipping them in a milk or milk substitute when eating, they absorb the liquid right up and are arguably more tasty 🙂 Cheers!

Can you make these with Quick minute oats. If not what would happen if you did? Thank so much for the ricipe!
Yes, you can! I have made them with both. I find that the quick oat do absorb the moisture more and can be slightly more crumbly in texture but they still come out. Thank you for your question and have a great day!
How do you figure these have 8 grams of protein in one cookie? I plugged the recipe into myfitnesspal they only have 1.1 gram of protein per cookie.
Hello Chealsey, Thanks for sharing what myfitnesspal has, that is helpful. The recipe card (the one on this blog is Create by Mediavine) is what calculates the nutrition based on the ingredients listed. The recipe uses a pancake mix which might complicate things as opposed to a single ingredient. As it says in the recipe card, “Please note that the Calculated Nutrition is an estimate at best.” I think to get very accurate nutritional data, I would have to use a lab. Thank you!
It is 1.1 gram per cookie, there is 8g of sugar per cookie.
These are so yummy! Can’t wait to share them with my family. I have MS and have been baking without butter for 4 years now. I substituted apple sauce and 1/4 cup vegetable oil and they still turned out amazing. Kodiak makes the best product and I love that you found a cookie recipe with it.

Yes, that should work. The baking time might be slightly less because there’s less moisture (the molasses) in the light brown sugar. Thank you for your question.
