Ingredients for Apple Bundt Cake
- cooking spray or unsalted butter, for greasing bundt pan
- 2 large eggs beaten
- 3 cups cake flour, you can substitute all-purpose flour
- 2 tsp lemon zest
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp Saigon cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp Kosher salt
- 1 cup granulated white sugar
- 1 cup dark brown sugar
- 1 cup Canola oil
- 1/2 cup apple cider, you can substitute apple sauce
- 1 tsp vanilla extract
- 3 cups cored, peeled, chopped apple (4-5 medium apples), use a variety of apples that are good for baking
- 1 cup chopped, toasted pecans, optional
- 2-3 tablespoons confectioner’s sugar optional, for garnishing

- 1/4 tsp Kosher salt
- 1 cup granulated white sugar
- 1 cup dark brown sugar
- 1 cup Canola oil
- 1/2 cup apple cider, you can substitute apple sauce
- 1 tsp vanilla extract
- 3 cups cored, peeled, chopped apple (4-5 medium apples), use a variety of apples that are good for baking
- 1 cup chopped, toasted pecans, optional
- 2-3 tablespoons confectioner's sugar, optional, for garnishing
Instructions
- Crack eggs into a small bowl when they are cold, beat them and allow them to warm up to room temperature for 30 minutes.
- Grease a 10 inch bundt pan and set aside.
- In a large mixing bowl, combine cake flour, lemon zest, baking powder, baking soda, cinnamon, allspice and Kosher salt. Set aside.
- Preheat oven to 350 degrees F.
- In a large mixing bowl, combine eggs, granulated white sugar, dark brown sugar, Canola oil, apple cider (or applesauce), and vanilla extract. Using an handheld electric mixer, medium speed for 1-2 minutes.
- Add the flour mixture to the wet mixture and beat until just combined. The batter should be thick. Add the chopped apple and optional pecans and mix. Add batter into the prepared bundt pan.
- Bake in the preheated oven for 60 minutes. To check for doneness, a toothpick or knife can be inserted into the cake and it should come out clean. Cool the cake on a wire rack for 10 minutes, then remove from pan, continue cooling cake on rack. Before serving, dust the top with confectioner's sugar, enjoy!
