Chocolate Crinkles
Hi Everyone, Chocolate Crinkles are traditionally made around the Winter holiday time (i.e. Christmas) but I’ll bet they would make a nice cookie for Valentine’s Day too 🙂
You need a little chocolate to get through those cold, winter months (that is if you live in a cold climate).
I adapted one of Eric’s family recipes for Chocolate Crinkles from his grandmother to have coconut oil instead of shortening since we do not regularly use shortening.

I also swapped the 2 squares of chocolate that the original recipe required with unsweetened baking cocoa which is a more common pantry staple.
I love this recipe because it makes a bunch, nearly 4 dozen, depending on the size you make them, so you can give some away to friends (if you want).
I think these would make a very sweet, edible Valentine – definitely more fun than a card, right?

Ingredients

- coconut oil
- granulated white sugar
- pure vanilla extract
- eggs
- 1/2 cup coconut oil, room temperature, solid
- 1 2/3 cups granulated white sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1/4 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon Kosher salt
- 1/3 cup milk, I used whole but you can use 1% or 2%
- 1/2 cup chopped walnuts, optional

Chocolate Crinkles

Ingredients
- 1/2 cup coconut oil, room temperature, solid
- 1 2/3 cups granulated white sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1/4 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon Kosher salt
- 1/3 cup milk, I used whole but you can use 1% or 2%
- 1/2 cup chopped walnuts, optional
Instructions
- In a large bowl, using a handheld electric mixer, cream together coconut oil, granulated white sugar, and vanilla. Consistency will be grainy or sandy because the coconut oil should be at room temperature. Make sure it's evenly mixed.
- Add 2 eggs and then unsweetened cocoa powder to the coconut oil mixture.
- In a separate bowl, combine the all-purpose flour, baking powder, and Kosher salt.
- Alternately add the 1/3 cup milk and the flour mixture into the coconut oil-egg mixture. Combine completely, cover, and chill 2-3 hours or overnight.
- Using a small cookie scoop 1 inch balls of dough, roll in confectioner's sugar generously.
- Place on a silicone lined rimmed baking sheet 2-3 inches apart.
- Bake in a preheated oven at 350 degrees F for 12 minutes.
- Allow to cool on baking sheet for a few minutes, then transfer to a wire cooling rack.
