Ingredients for this recipe

- 1 package (about 16 ounces) dried black beans, soaked for 24 hours with 2 tablespoons of salt, rinsed
- 1 tablespoon regular olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced (or 2 teaspoons jarred, minced garlic)
- 2 medium carrots, diced
- 2 stalks celery, diced
- 8 cups water (or sub. the 8 cups of vegetable or chicken broth)
- 8 teaspoons of low sodium vegetable Better than Bouillon (you can sub. the same amount of chicken flavor if you wish)
- 1-2 bay leaves
- Salt and fresh, ground pepper, amount to taste
- Optional toppings: fresh herbs (parsley, thyme), croutons, sour cream, or a drizzle of extra virgin olive oil

Black Bean Soup
This hearty black bean soup is simple, savory, and one of the best comfort foods around and prepared right in your Instant Pot!
Ingredients
- 1 package (about 16 ounces) dried black beans, soaked for 24 hours with 2 tablespoons of salt, rinsed
- 1 tablespoon regular olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced (or 2 teaspoons jarred, minced garlic)
- 2 medium carrots, peeled and diced
- 2 stalks celery, diced
- 8 cups water (you can sub. 8 cups vegetable or chicken broth and forgo the Better than Bouillon)
- 8 teaspoons of low sodium vegetable Better than Bouillon (you can sub. the same amount chicken flavor, if you wish)
- 1-2 dried bay leaves
- Salt and fresh, ground pepper, amount to taste
- Optional toppings: fresh herbs (parsley, thyme), croutons, sour cream, or a drizzle of extra virgin olive oil
Instructions
- Preparation: Soak the dried black beans in 2 quarts of water with 2 tablespoons of salt for 24 hours, at a minimum of 4-8 hours but 24 hours is best. Prepare the garlic, onions, carrots, and celery.
- Saute the veggies in the Instant Pot: Set your Instant Pot to the "Saute" setting. Add 1-2 tablespoons of regular olive oil and then the prepared garlic, onions, carrots, and celery to the metal instant pot liner. Sprinkle up to 1 teaspoon of salt, as the veggies cook. Stir the mixture until the garlic and onions are translucent and the veggies start to turn light golden brown at the edges. Add the 8 cups water and 8 teaspoons of Better than Bouillon. Add the bay leave(s). Press the "Cancel" button, to turn off the "Saute" setting.
- Cook the Soup: Put the Instant Pot lid on, with the vent set to, "sealing". Select "pressure cook" and set for 15 minutes. Remember that the Instant Pot takes time to come to pressure and to depressurize, so plan your time accordingly. When the soup is done, you do have the option to release the steam with the quick-release vent, remember to keep clear of the steam as it is hot! When the Instant Pot is fully depressurized, remove the lid, stir the soup, remove the bay leaves, and serve with the optional ingredients listed and more salt and pepper, amount to taste. Enjoy!
