Easy Banana Bread
Hi Everyone, I made this Easy Banana bread and shared it on Instagram.
After I shared there and then later on Facebook, several people started to message me telling me that they also made banana bread that exact weekend or day.
What are the chances of all these people that I know making banana bread at the same time?
I thought it would be fitting for me to finally share the recipe that I made that day with the ingredients that I had on hand in my kitchen – nothing special – just some extremely ripe bananas which I saved from getting thrown out (another day and I would have had to!), granulated sugar and farm fresh eggs from my sister-in-law’s hens which are in abundance this time of year.

Ingredients
- 2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 2 large eggs, (I use farm-fresh, free-range eggs)
- 3-4 very ripe bananas, (1.5 cups banana puree)
- 1 cup granulated white sugar
- 1/2 cup canola oil
- 1/4 cup walnuts, optional

My Review: Nesting Stoneware Mixing Bowls (Set of 2) from Uncommon Goods
When I use these bowls, I have a sense that they are not just designed for beauty but most importantly, function.
There was a lot of care and thought that went into making the design of these bowls.
I love that they nest which is great for storing.
I love the handles which are perfect for lifting and the pour spouts for pouring batter or liquid (as shown in the collage below).
Together, they are perfect for any baking recipe requiring 2 bowls where you mix the wet and dry ingredients separately before combining or just use 1 bowl for a 1-bowl recipe.
It is so nice to work with bowls that have a handmade feel; it is entirely different and more soulful than baking with plastic or machine/factory/industrial-made vessels.
I love the ridges on the insides of the bowls, there is texture and they are each individual, unique.
Do not be surprised if you see them make appearances in several upcoming posts since I use them so much now!
About the artist Maggy Ames
Here is a bio about the ceramic artist Maggy Ames who makes these bowls:
Pottery is a second chapter in life for Maggy Ames. Trained as an attorney, she practiced in New York City for 35 years, representing the interests of people with developmental disabilities. During that time, the part-time pursuit of her pottery studio was a haven of peace and quiet from the politically stormy world of her work. In 2009, she retired from the practice of law and came to pottery full-time.
Her interest in ceramics was first sparked during her years at Skidmore College. Though she never studied in that renowned ceramic program, she watched enviously as classmates immersed themselves in clay. Immediately after completing law school, she decided that clay would be her new learning project.
Today, she is a full-time potter. Maggy and her partners operate one of the few remaining working clay studios in Manhattan.

Easy Banana Bread

Ingredients
- 2 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 2 large eggs, (I use farm fresh, free range eggs)
- 3-4 very ripe bananas, (1.5 cups banana puree)
- 1 cup granulated white sugar
- 1/2 cup canola oil
- 1/4 cup raw unsalted walnuts, chopped, optional
Instructions
- Preheat oven to 350 degrees F. Using some coconut oil or butter, grease a loaf pan (I use 9in.x5 in.x3in. size). Combine dry ingredients (flour, baking powder, baking soda, salt, cinnamon, and nutmeg) in a small-medium bowl.
- Puree peeled very ripe bananas in the blender. Combine mostly "wet" ingredients (pureed bananas, sugar, eggs, and oil until evenly mixed, be careful not to over mix. Pour combined wet ingredients into dry ingredients (for this recipe, it doesn't really matter if you pour the dry ingredients into the wet or vice versa). Stir until combined and it's okay if the mixture is slightly lumpy. Pour mixture into the loaf pan.
- Bake in the center of the oven, a middle rack for 50 minutes, At 50 minutes take out and check to see if it's done. I always have to leave it in for another 15 minutes. You can make a foil tent to put over the top if you do not want it to brown partway through. I personally love it when the top is crusty and brown. You can test to see if it is done by inserting a knife in the center and it should come out clean. When it is done allow it to cool for 5 minutes before removing it from the pan to a wire cooling rack. Serve warm or allow to cool completely. Enjoy!
