Chicken Rice Hummus Wrap
Hi Everyone, we all need to remember to eat lunch, right?
For lunch, I love something quick and easy to make, yet fills me up so that I am not hungry, or worse yet, hangry for the rest of the day, until dinner.
We make a lot of chicken for dinner and I like to make extra so that my husband, Eric can take leftovers to work and I can have something easy to prepare at home.
This Chicken Hummus Wrap definitely falls into that category.
Ingredients
- 3 ounces of cooked chicken, a great way to use up leftover chicken from the diner, use the amount to taste
- hummus, check out our “Hummus” recipes
- 2 leaves Romaine lettuce, washed and dry, amount to taste
- 1/8 tsp Kosher salt, or amount to taste
- 1/8 tsp fresh ground pepper, or amount to taste
- 1/2 cup white rice cooked, you can substitute brown rice, if you prefer
- 1 large flour tortilla wrap – Try our Homemade Flour Tortillas

Chicken Rice Hummus Wrap
This Chicken Rice Hummus Wrap recipe is a perfect way to use up chicken leftovers and have a healthy, filling lunch at the same time.
Ingredients
- 3 ounces cooked chicken, great way to use up leftover chicken from diner

- 2 leaves Romaine lettuce, washed and dry, amount to taste
- 1/8 tsp Kosher salt, or amount to taste
- 1/8 tsp fresh ground pepper, or amount to taste
- 1/2 cup white rice, cooked, you can substitute brown rice, if you prefer

Instructions
- Lay a flour tortilla on your plate or cutting board. Spread the desired amount of hummus on the tortilla surface.
- Add cooked rice, chicken, Romaine lettuce leaves, and Kosher salt and pepper to taste.
- Roll the wrap together and slice it in half. Enjoy!
