Hops Lemon Verbena Mint Simple Syrup
This light, Summer-y herb-infused, sweet simple syrup. Pair this delicious syrup with drinks, mocktails, cocktails and over desserts.
Ingredients
- about 1 teaspoon dried lemon verbena (3 leaves)
- 1 teaspoon dried hops flowers
- 1-3 fresh mint leaves
- 1 cup water
- 1 cup granulated white sugar
Instructions
- Put lemon verbena, hops and mint leaves in a t-sac or mesh tea strainer. Set aside.
- In a small-medium saucepan, bring 1 cup water to a boil.
- Once it's boiling, remove from heat and add the hops, lemon verbena and mint into the water.
- Let it stand for 5 minutes (no longer than 15 minutes, the longer it stand, it can get more bitter in taste).
- Remove the tea strainer or t-sac.
- Add the 1 cup granulated white sugar. Stir with a wooden spoon until the sugar is dissolved. Allow the mixture to cool.
- Pour into a lidded jar. Store in the refrigerator. Use in your favorite drinks, lemonade, mocktails and cocktails, enjoy!

I made this today and it’s yummy. I quadrupled the amount of herbs and steeped for 20 minutes. I also doubled the amount of water and sugar (essentially doubled the recipe with 4x the herbs). The lemon verbena and the mint are both strong herbs (I used peppermint), and want to dominate the other flavors. Easy enough to adjust to your liking.
