Breakfast can be healthy, delicious, and doesn't have to take up a lot of your time. I tried out Garden Lites Carrot Berry Muffins made with fresh carrots to help simplify and improve my morning routine. Check out my video showing how to prepare them!
Estimated reading time: 4 minutes
I am not a morning person by nature, therefore, I need to put systems in place to make sure my morning runs smoothly so I can get my work done.
That might mean laying my clothes out the night before (and my daughter's too), setting the coffee maker, setting aside anything I need for the next day the night before.
Having less to do in the morning is a good thing because I feel like I move slowly in the morning and it just takes extra time to do things.
If my breakfast take less time to prepare that's a win for me.
I like these Garden Lites Carrot Berry Muffins made with fresh carrots because they come frozen and only take 35 seconds in the microwave and when it comes out, you have a muffin that tastes like it was fresh baked.
This is the perfect breakfast or snack item for picky toddlers too because the veggies and fruit is baked into the muffin.
My daughter tried the Carrot Berry muffin and liked it.
I was worried that she wouldn't like it but she tried one and I was pleasantly surprised because she's very particular about what she liked.
I found my Garden Lites Muffins at Stop & Shop!
You can find yours in the freezer section of your nearest Publix, Stop & Shop, Giant, Shop-Rite, HEB, Kroger, or Costco.

These go well with your morning coffee or tea 🙂
I made a little video showing how to prepare these Garden Lites muffins:
