This recipe for Chocolate Chip Oatmeal Raisin Cookies is a tasty snack when your family needs a treat.
This recipe uses coconut oil instead of butter and the dough can be mixed with Go & Grow by Similac® Food Mix-Ins™ for your toddler (ages 1+) for a yummy treat!
It has been raining for days in New Jersey and it's a little cooler than usual - perfect weather for baking cookies!
My 2-year old daughter M. has been my busy, little, baker and helper between pouring her bubble mixture on the floor and jumping in it to simulate muddy puddles and playing with her favorite toys.
I told her we would be making special cookies with chocolate in them and luckily she did not have to wait long.
By the way, you never want to keep a toddler waiting long!
These Chocolate Chip Oatmeal Raisin Cookies come together fast, using ingredients that you probably already have in your kitchen, 5 minutes preparation time, and only 10 minutes baking time 🙂
Coconut oil is probably the most uncommon ingredient in this recipe but it is a staple in my kitchen and I love that it is plant-based.
If you don't have coconut oil, you can substitute the same amount with butter. For the cookies I gave to her, I used Go & Grow by Similac® Food Mix-Ins™ to put some nutrition in the mix!
I have mentioned before on Life's Little Sweets that M. has been a "fussy eater" and I have struggled to get her to eat the food I want her to eat 🙁
What has always worked for me in getting her to eat more nutrient-dense food is baking it into baked foods.
Yep, hiding it!
She loves chocolate (note: there is not a lot of chocolate in this recipe and it can totally be skipped if you don't want to add it) and cookies so I came up with this recipe and added 1 packet of Go & Grow by Similac® Food Mix-Ins™ to a ½ cup of dough (using a medium cookie scoop makes 5 cookies).
I baked her cookies on their own sheet and baked another sheet of cookies using more dough (without the Go & Grow by Similac® Food Mix-Ins™) for my husband and me to eat too!
By the way, I did try one of her cookies and they taste exactly the same as the ones without the Go & Grow by Similac® Food Mix-Ins™.
