This Sausage-Hash Brown Breakfast Casserole Bake is inspired by the yummy strata and casseroles that Eric’s sister, Nicole, and her husband Colin, make for their yearly Mother’s Day brunch in years past.

- 12 ounces regular breakfast sausage links (340 grams) about 14 links
- 30 ounces frozen hash browns (1 pound, 850 grams) thawed
- 8 ounce package of shredded cheese (226 grams) Colby & Monterey Jack Mix
- 6 jumbo eggs or 12 large eggs
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper plus more for topping and serving, if desired
Optional Toppings For Serving
- fresh ground black pepper to taste
- Kosher salt to taste
- fresh chopped chives to taste
- 1 dollop sour cream or plain Greek yogurt per serving

Sausage Hash Brown Breakfast Casserole Bake Ingredients
- 12 ounces regular breakfast sausage links (340 grams), about 14 links
- 30 ounces frozen hash browns (1 pound, 850 grams), thawed
- 8 ounce package of shredded cheese (226 grams), Colby & Monterey Jack Mix
- 6 jumbo eggs, or 12 large eggs
- 1 cup milk
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper, plus more for topping and serving, if desired
Optional Toppings For Serving
- fresh ground black pepper, to taste
- Kosher salt, to taste
- fresh chopped chives, to taste
- 1 dollop sour cream or plain Greek yogurt, per serving
Instructions
- Preheat oven to 350 degrees F.
- Grease a 9 x 13-inch baking dish.
- Cook sausages in a skillet over medium heat. Cook until the sausage is browned, approximately 6-7 minutes, stir to ensure even cooking. Drain the fat. Allow sausages to cool, then cut into bite-size pieces.
- In a large mixing bowl, add thawed frozen potatoes, cut up sausages, 2 cups of the shredded cheese (reserve the remaining amount from the package to sprinkle on top of the casserole before baking). Mix thoroughly, then add the mixture to the greased 9 x 13-inch dish.
- In a large mixing bowl (you can use the same one that you used for the hash brown mixture), mix eggs, milk, salt, and pepper. Whisk until combined. Pour mixture over the hash brown sausage mixture.
- Bake at 350 in the preheated oven for 1 hour. To check for doneness, the center should be set and the edges should be golden brown.
- When the casserole is done, allow cooling for 5 minutes before slicing and serving. Tastes great garnished with chives and served with a dollop of sour cream or plain Greek yogurt. Enjoy!
