Hi Everyone, if you're a fan of the hit show Ted Lasso, you're in for a treat, literally! We have my take on the Ted Lasso Biscuit recipe.
In case you are not familiar with the show, first, let me catch you up to speed.
Ted Lasso is a heartwarming and hilarious comedy series that follows the story of Ted Lasso, an American football coach who is hired to lead an English Premier League soccer team, despite having no experience coaching soccer. With his folksy charm and positive attitude, Ted tries to turn around the struggling team while navigating the cultural differences between American and English sports. Along the way, he forms bonds with his players and the community and teaches them valuable lessons about teamwork, perseverance, and kindness. The show is a refreshing and uplifting take on sports comedies, with a talented cast, witty writing, and a feel-good message that will leave you smiling.
If you're a fan of this hit comedy series, you might have noticed the characters' love for biscuits. In the show, biscuits are a popular treat that is often enjoyed with a cup of tea or as a snack. These biscuits look delicious and have caught the attention of fans all over the world.
But what exactly are these biscuits and why are they so special? The biscuits featured in Ted Lasso are a traditional British treat called a "digestive biscuit." Digestive biscuits are a type of sweet, biscuit that is often enjoyed with tea or coffee. They have a crumbly texture and a slightly sweet, nutty flavor that makes them a perfect accompaniment to hot drinks.
In the show, the character of Ted Lasso has a particular fondness for biscuits and often shares them with his colleagues and friends. His love for the biscuits has even inspired fans to try them for themselves, with many taking to social media to share pictures of their digestive biscuit creations.
So why not give them a try and join in on the biscuit-loving fun that Ted Lasso has inspired?
These biscuits would be perfect for Easter, 4th of July/Independence Day, Halloween, Thanksgiving, Christmas, and New Year's.
I can also see them as wonderful edible gifts for baby showers, new mothers/baby gifts, wedding parties, bridal showers, and bridesmaids' gifts.
Or perhaps, you would just bring them in to work as a nice edible treat for the office like in Ted Lasso.
It's a traditional English Tea biscuit that has no eggs and a simple ingredient list (below). I do include suggestions in the recipe notes to further customize the recipe.

Make the biscuit batter: In the bowl of a stand mixer (with the paddle attachment, please note, a handheld electric mixer can work too, with this recipe), add the butter, and set it on high, for 3-5 minutes (the butter will turn paler in color). With the mixer running set down back to low speed, gradually add the ¾ cup of powdered (confectioner's) sugar. Continue to mix in until fully combined, pale, and fluffy. Turn off the mixer, sift in the 2 cups of all-purpose (unbleached) flour and the ¼ teaspoon kosher salt, put the mixer on low speed, and mix until it's just combined (please do not overmix the dough!). The biscuit dough will be thick and airy, you will need to use an offset spatula or your clean fingertips to get it in the square pan evenly. It should be about ½ inch thick in the pan. Cover the pan and refrigerate for 30 minutes.
Preheat the oven: Place your oven rack in the middle of the oven and preheat your oven to 300 degrees F (148 degrees Celsius).
Bake the biscuits: Bake in the preheated oven for 45-60 minutes (45 minutes works for us!). When they are done, they should be set in the center and allowed to cool completely. Cut along the precut lines to separate. Enjoy!

I made these for the Ted Lasso finale and they were perfect! I added vanilla and almond extract (half teaspoon each). But even better than an awesome cookie I got a new kitchen tip - wetting the parchment paper to make it fit the pan better. Never heard of this before but I’ll never struggle to fit the paper in the pan again! Thanks!
