Chocolate melting wafers and white chocolate morsels are both used in baking and confectionery, but they have some differences in terms of composition and how they behave when melted.
Ingredients:
Chocolate Melting Wafers: These are often made with a combination of cocoa solids, sugar, and vegetable fats (such as palm kernel oil). They may also contain emulsifiers and other additives to ensure a smooth texture when melted.
White Chocolate Morsels: White chocolate is made from cocoa butter, sugar, and milk solids. It doesn't contain cocoa solids, which gives it a distinct white color. White chocolate morsels may also include additional ingredients like vanilla for flavor.
Melting Properties:
Chocolate Melting Wafers: Designed specifically for melting and coating, chocolate melting wafers have a stable composition that makes them easy to melt and work with. They often have a lower melting point, which helps them achieve a smooth and glossy finish when melted.
White Chocolate Morsels: White chocolate can be a bit trickier to melt than dark or milk chocolate because it contains cocoa butter, which has a higher melting point. It's important to melt white chocolate slowly and gently to prevent it from seizing or becoming grainy.
Flavor:
Chocolate Melting Wafers: These may have a more neutral chocolate flavor, and the emphasis is often on achieving a smooth and creamy texture.
White Chocolate Morsels: White chocolate has a sweet and creamy flavor with hints of vanilla due to the presence of cocoa butter and milk solids.
Color:
Chocolate Melting Wafers: Typically, these are available in dark, milk, or colored varieties, depending on the brand and product.
White Chocolate Morsels: As the name suggests, white chocolate is naturally white or ivory.
When choosing between chocolate melting wafers and white chocolate morsels, it often depends on the specific recipe and the desired flavor and appearance. Chocolate melting wafers are convenient for coating and dipping, while white chocolate morsels can be used in a variety of recipes, such as cookies, cakes, and desserts, where a sweet and creamy flavor is desired.
Reindeer Bait (Christmas "Reindeer Crack")
Mix the dry ingredients: In a large mixing bowl, mix the Corn Chex, Rice Chex, Butter Snap pretzels, mini marshmallows, and holiday M&Ms.
Melt the chocolate: In a medium mixing bowl, add the vanilla melting wafers and the white chocolate morsels. Microwave 3-4 times on high for 30 seconds, stirring in between, each time, until fully melted.
Mix: Pour the chocolate mixture over the cereal mixture and gently toss together until it's completely coated. Spread the mixture evenly onto a parchment-lined, rimmed baking sheet. Sprinkle holiday sprinkles over the top of the mixture while it's still sticky. Refrigerate for 1 hour or until the mixture is dry.
When it's done chilling, take the baking sheet out and break apart the Reindeer Bait and serve, enjoy!

white chocolate chips are the exact same thing as melting wafers. Look at the ingredients. If you want white chocolate, it has to have cocoa butter in it.
