Easy Non-Dairy Ice Cream Pops can be made in minutes and are decorated with homemade chocolate shells, sprinkles, and pistachios. Cool off in the hot weather with this cheerful summer treat!

Hey Everyone, what would you decorate these Easy Non-Dairy Ice Cream Pops with?
My choice is homemade chocolate shell, all natural sprinkles and roughly chopped pistachios.
Allow me to gush a little about ice cream...ever since I was a kid, I have always loved Häagen-Dazs® ice cream.
Among my favorite (and my family's) flavors are Rum Raisin, Vanilla Swiss Almond and Coffee - to name a few!
I love how their ice cream is so rich and creamy with amazing attention to detail with their mix-ins.
The stars of this show are Häagen-Dazs® Chocolate Salted Fudge Truffle Non-Dairy and Häagen-Dazs® Peanut Butter Chocolate Fudge Non-Dairy ice cream pints.
They also have Häagen-Dazs® Coconut Caramel Non-Dairy (yum!).

One member of our household is completely lactose intolerant: my husband Eric, so I was thrilled when I heard about the new non-dairy Häagen-Dazs® ice cream.

I love how these pops come together in minutes making it a fun snack or dessert to put together.
Really, it's a dessert hack more than anything and you can customize them to your liking.

I used non-dairy chocolate combined with Vegetable or Canola oil (or the same amount coconut oil) to make the homemade chocolate shell.

The all natural sprinkles are really pretty and the roughly chopped pistachios add a buttery, nutty crunch with a pop of pretty green color.




Here's a step-by-step tutorial to walk you through making these yummy pops:

Gather your ingredients
Line a rimmed baking sheet with parchment paper and set aside.



Melt the non-dairy chocolate and oil in a medium pan over low heat and whisk until liquid.
Allow the pints to warm slightly, just so that are not rock hard.
This should take about 5 minutes, depending on how warm or cool your house is. Be sure not let them melt!

Stick 4 Popsicle sticks in the pint more than halfway down.

Lay the wedges on the prepared baking sheet.

Drizzle the homemade chocolate shell on the wedges, sprinkle with sprinkles and chopped pistachios.
Place in the freezer for ½ hour to get nice and hard before serving.
