Let's talk about Meatless Monday!
I come from the perspective of being an omnivore but I like to try to reduce the amount of meat I eat intentionally because it's a healthier option, more resourceful and it's better for the environment and world.
I love coming up with vegan and vegetarian ways of cooking and baking because it's just another way of cooking that I enjoy.
I am a "foodie" though and I need my food to have flavor and be delicious, so I came up with some ideas on How to Make Meatless Monday Satisfying.
By the way, how is everyone's November going?
Is your Fall schedule busy like mine?
I am always looking for quick and easy lunch or dinner solutions for those times when I need it and I found one to share with you...
It's great to be able to have something on hand when I get busy that I can just heat up in the microwave or oven.
It literally took me only 4 minutes and 15 seconds to heat up.
Sometimes, I need to just be able to heat something up on days that I just can not devote the mental bandwidth to cooking.
You know, I normally do love cooking and baking, so it's nice when I do make something quick that it be something that tastes good and real.

Hummus is made out of chickpeas, sometimes ground sesame seeds (called tahini), lemon juice, garlic and olive oil.
It can be customized in so many different ways and flavors.
I love it because it always tastes clean and it's filling & versatile.
Why not use it as a spread in a sandwich?

#3 - Incorporate Grains, Beans and Pasta
Add these to every meal, soup, salad or side.
There's always room for these ingredients; it's so easy to do.
Not to mention that grains and beans are so good for you!
